High Protein Coconut Snowballs
High Protein Coconut Snowballs are the perfect protein packed festive treat. They taste fun and indulgent and can be made to comfortably fit in with your daily macro targets. The secret to these protein coconut snowballs is the vegan protein powder, providing unbeatable texture when compared with whey. Added whey powder often makes for an overly sticky protein ball that can harden or dry out in the fridge.
These protein coconut snowballs stay a little softer for longer and can be either a festive treat or an easily transportable snack. The High Protein label can be a bit misleading and seems to be slapped on everything these days, but in this case it’s used in the context of other energy balls and similar snacks. These would usually have 1-2g protein max, but these have about 5g. For a decent snack, you’d probably want 2 which would clock in around 260 calories. This treat can fit comfortably in most macro ranges. It depends on the context of your goals and daily protein needs.
Making the balls smaller does impact the texture a little bit, but you can really make these protein coconut snowballs as big or as small as you would like. High Protein Coconut Snow-Balls
If your weetbix aren't already crushed, start by crushing the bricks into a mixing bowl
Add dry ingredients and stir to distribute evenly
Add the Condensed Milk and mix thoroghly until everything comes together
Roll Mixture into 10 balls - Roughly a tbsp each
Roll the shaped balls through the extra coconut to coat. They should be fairly firm and can be eaten immediately, but best served cold from the fridge!
