White Christmas Rocky Road
Make this Christmas a White Christmas with this non-traditional twist on a classic holiday treat. Rocky Road is especially popular at Christmas time in Australia. This White Christmas Rocky Road version is similarly delicious and easy to prepare. It might even convert some people who aren’t normally fans of traditional milk or dark rocky road.
The dried fruit and toasted nuts elevate this classic into something a little more elegant, without adding any extra effort. In our case dried fruit was also a more cost effective alternative when compared with the commercially packed lollies that make up traditional rocky road. If macadamias are particularly expensive or hard to come by in your area, you could cut back slightly on the recommend quantity or choose one of the substitutes identified in the recipe notes below.
The original inspiration for this white christmas rocky road recipe came from Accredited Practising Dietitian and Nutritionist Marika Day, who has been posting about this viral Pavlova Rocky Road on Instagram & TikTok. Her original version is heavy on tropical summer flavours and includes dried mango. It is also topped with fresh passionfruit pulp and lime zest which is both delicious and beautiful. This version doesn’t keep quite as long due to the fresh fruit, but both variations tend to be eaten faster than they would otherwise spoil.
The tartness of the dried fruit balances out some of the sweetness from the meringue and white chocolate, so the recipe doesn’t feel cloyingly sweet. I also used jumbo roasting marshmallows to keep the all-white colour, which also seem to be less sweet than other brands. I think homemade vanilla marshmallows would elevate this recipe to the next level, which is something I’m going to try next year.

White Christmas Rocky Road
Roughly chop your marshmallows, meringue kisses and nuts into smaller pieces. Keep some pieces larger if you a more rustic look.
Line a lamington / slice tin with baking paper.
In a microwave safe mixing bowl, empty the packets of white chocolate melts and add the coconut oil. Heat in 30second bursts until the edges are melting but there are still some intact buttons.
Stir to combine the oil and chocolate, until the remaining buttons have dissolved and the mixture is consistent.
Mix in the remaining ingredients, ensuring everything is well coated and the ingredients are evenly distributed.
Pour into the lined tin and flatten out gently as you spread with a spatula. Refrigerate for 4 hours or until set before transferring to a cutting board, slicing & serving.

Recipe Notes
If you are having trouble with the insides of your marshmallows sticking to your knife, dust the board, knife and marshmallows lightly with cornstarch as you chop. Sealing the cut sides with a small amount of starch stops them from sticking to everything.
The most similar substitution for cherries would be dried cranberries. All soft dried fruits will work in this recipe.
You can use most unsalted mixed nuts. Pistachios would be great, as would hazelnuts.
The coconut oil gives a subtle coconut flavour and is also solid at cool room temperature. Liquid oils will not work as a substitute and butter will be slightly softer. The coconut oil is better left out than substituted in this recipe.
