    Cashew Cream Beef Curry

Cashew Cream is used here to replace the traditional yogurt or heavy cream added to finish the curry sauce. Much less temperamental when adding to a hot sauce, this cream substitute adds a velvety mouthfeel and nutty flavour that pairs perfectly with the curry spices, spinach and beef. I’ve also used an instant pot to ensure the beef comes out extra tender, but the recipe can be followed with chicken pieces or tofu by following the same recipe steps for marinating, then pan frying the protein in butter and contining by adding the remaining curry ingredients. To finish the curry just add the thick cashew cream once everything else is…

    Brunch Cups

Brunch Cups are a variation on mini egg quiches and are filled with an assortment of vegetables, cheese and meats. They are endlessly customizable and can be whipped up with whatever ingredients you have on hand as long as you have some puff pastry in the freezer. If you have a good non-stick muffin pan, or silicone cupcake liners, these can also be made without the pastry! Mini puff pastry quiches are a great option for entertaining because they can be made ahead of time and reheated just before serving. They can also be served at room temperature, making them perfect for a buffet-style brunch or party. Tiny hands also…

Now I completely agree that ready-made sauces have their place for convenience and allow access to a large variety meals for minimal effort. I’m also a great fan of spice blends and keep a few special jars on hand to achieve effortless consistent results. The main benefit to understanding the components of a spice blend though is that you can…

    Tiktok Style Feta Pasta

I’m well behind the trend in posting about this Feta Pasta dish that went viral in early 2019. It would be remiss of me to exclude it from our recipe archives though as this meal is now a weeknight staple in our rotation. I’ve made a few tweaks to lean more heavily on year-round pantry staples, but this dish is also fantastic when made with fresh basil and cherry tomatos in season. As for pasta choice, this is also incredibly flexible. Some batches we will use meat-filled tortellini and others we will use dried protein pasta. The key is to stir through the melted cheese while the tomato is still…
