This hearty beef stew is the perfect combination of rustic comfort food and refined savoury flavours. Leaning heavily on pantry staples for the seasoning and topping, the heart of this meal is in it’s slowly simmered filling paired with fluffy dumplings that soak up all the delicious sauce. Not for the feint of heart, this French Onion Potato Bake is incredibly rich and full of bold onion flavour. A great accompaniment to a fresh, crisp green salad & BBQ meats. It’s intense, but in a good way. The overnight onions should produce plenty of leftovers. There’s ideally enough in the recipe to make two batches of this potato bake, depending on how heavy handed you are with the onions.
