Much less temperamental when adding to a hot sauce, this cream substitute adds a velvety mouthfeel and nutty flavour that pairs perfectly with the curry spices, spinach and beef. This quick Lentil Salad is a lunchtime favourite incorporating grilled lamb, creamy tzatziki and a warm mix of Sautéed Spinach, Onion & Lentils. Blistered grilled cherry tomatos are used as a tasty garnish to add extra colour and rich umami sweetness, along with the balsamic vinegar and lemon acidity. Oven baking the meatballs is the ultimate in convenience because it lets you prep all the meatballs and bake them at once. Once cooked, the baked meatballs can be served straight up as an appetiser. For this I would use a dipping sauce like Tzatziki or Tomato ketchup. Alternatively, the baked meatballs work well as a dinner option. Cheese & Herb Warm Pumpkin Salad
This hearty Salad is another firm favourite in our household. Brown Lentils hold their shape well unlike other varieties more suited to soups and stews. They have a light nutty flavour and can easily be used to boost the volume of dishes. Almonds also compliment Lentils perfectly, so if you are aiming for a complete plant based dish you could swap out the feta cheese for some toasted slivered almonds and serve this pumpkin salad as a delicious vegan main.
