Better Together – Mango Cheesecake Layered Sponge
Valentine’s Day is just around the corner and for me, the day is all about celebrating the things in your life that make you better. Whether it’s with your significant other, best friend, or family – these relationships all have the power to amplify your best qualities. Together we can create something greater than what we could achieve alone. The support, companionship, and love that come from these relationships make life’s ups and downs easier to bear and the joys sweeter. This notion of “better together” is especially true in cooking as well. Just like how two people can complement each other and make a relationship stronger, two flavors can…

Brunch Cups
Brunch Cups are a variation on mini egg quiches and are filled with an assortment of vegetables, cheese and meats. They are endlessly customizable and can be whipped up with whatever ingredients you have on hand as long as you have some puff pastry in the freezer. If you have a good non-stick muffin pan, or silicone cupcake liners, these can also be made without the pastry! Mini puff pastry quiches are a great option for entertaining because they can be made ahead of time and reheated just before serving. They can also be served at room temperature, making them perfect for a buffet-style brunch or party. Tiny hands also…

Maca Powder, Apple & Cacao Nib Muffins
These delicious Apple Muffins use some lesser known ingredients including Maca Powder and Cacao Nib for a nutritious and flavoursome boost. Cacao Nibs are made from dried and fermented bits of the cocoa bean. Used here as a crunchy textural replacement for chocolate chips, rich in iron and magnesium. Maca Powder is a traditional peruvian powder adding a nutty, caramelized flavour. There are a long list of reported health benefits, especially linked to hormonal health and energy production. Unfortunately the regular dose required is a fair bit higher than you would get from a single muffin. If you’re interested in reading more about Maca Powder, some of the claimed health…

Choc Chip Caramel Almond Protein Muffins
Choc Chip topped and packed with almond protein ready for snacking. These muffins are quick to put together and perfect for small batch meal prep. This recipe can be easily multiplied by adjusting the yield on the recipe card below. Another convenience is that this recipe uses one single serving of almond protein. This allows compatibility with samples & individual serving sachets. I encourage you to compare different brands or flavours of plant protein as they all vary quite considerably with baking. I’ve had the best and most consistent results with the Macro Mike range of peanut and almond protein. I have also experimented with Muscle Nation Custard casein. Once…

Oat Slice Cookies
Roughly 12 months ago we received a free sample of Oat Slice Cookies with our weekly grocery shop. They were tasty and convenient, though nothing particularly nutritious at roughly 150 calories from mostly carbs and fat. A box of 4 individually wrapped snacks retailed for a whopping $5.50. The more I thought about it, the more it annoyed me. Of course there is always a cost for convenience, but these were simple oat cookies. I want to encourage you to give these ago, not just to cut a few dollars off your grocery bill, but also to enjoy the process, eat a more delicious cookie and waste a bit less…
