One Pot Mexican Mince Bake
I’ve really been leaning into efficient meals lately and this hearty, veg packed One Pot Mexican mince bake is another perfect example. Making weeknights easy, there’s minimal prep or cleanup. We have 4 generous portion sizes, but this meal could be stretched a little further depending on your family size and needs. Rice and lentils pair well for a slightly earthy flavour, while also blending seamlessly into the mince for fussy eaters. A further boost could be achieved by adding black beans, kidney beans or cannellini beans. This trick is especially useful if you’re wanting to replace the mince in this receipe for a vegetarian spin on this One Pot…

Basic Taco Mince
I know Taco mince is a staple in pretty much every household worldwide, so it may at first seem a little redundant to post a recipe for it. However, the basics tend to vary wildly between families and many households rely solely on pre-made sauces or single purpose spice blends. Grilled Lamb with Warm Lentil Salad
This quick Lentil Salad is a lunchtime favourite incorporating grilled lamb, creamy tzatziki and a warm mix of Sautéed Spinach, Onion & Lentils. Blistered grilled cherry tomatos are used as a tasty garnish to add extra colour and rich umami sweetness, along with the balsamic vinegar and lemon acidity. This lentil salad can make a light lunch or dinner, and reheats well from cold or frozen – as long as you hold off on adding the tzatziki until everything else has been warmed up. Both versions using pre-marinated lamb or the marinade listed in the recipe below are equally delicious, the choice depends mostly on time and resources. If you’re…

Crispy Baked Lamb Meatballs
Oven baking the meatballs is the ultimate in convenience because it lets you prep all the meatballs and bake them at once. Once cooked, the baked meatballs can be served straight up as an appetiser. For this I would use a dipping sauce like Tzatziki or Tomato ketchup. Alternatively, the baked meatballs work well as a dinner option. You can simply mix through a tomato based sauce then combine with spaghetti or zoodles. My favourite way to eat these right now is on top of my Greek-style Risoni Salad and paired with a crisp glass of Riesling. This warm pasta salad with meatballs then makes excellent leftovers for lunches early…
