Hearty Beef Stew with Polenta & Mash Topping
This hearty beef stew is the perfect combination of rustic comfort food and refined savoury flavours. Leaning heavily on pantry staples for the seasoning and topping, the heart of this meal is in it’s slowly simmered filling paired with fluffy dumplings that soak up all the delicious sauce. This meal is great to prep in advance and can be completed up to the topping stage to be finished later. Once the stew has cooled, you can spoon on the cooled topping, seal well and freeze up to 3mths or refrigerate if you’re going to finish the cooking in the next two days. It’s a great family gathering dish and pairs…

One Pot Pork Chop with Carrots, Mash & Gravy
This one pot pork chop meal comes together with minimal hands on preparation and rewards you with a full plate of silky mash, tender carrots, rich gravy and melt-in-your-mouth spiced pork. Thick cut pork chops work best here, ideally around 3/4 to 1 inch thick. Our local butcher sells these for a similar price per kg to the main supermarkets in our area. With thinner supermarket cuts, it’s important to check them carefully for any bone fragments before seasoning. While they won’t cook up quite as juicy and tender as a thicker cut, the meal will still be delicious. Our butcher cuts have a noticeably better flavour and texture and…

Vietnamese Style Caramelized Pork Bowls
Strong punchy Vietnamese flavours come through in this astonishingly easy high protein Caramelized Pork Mince Stirfry. The full version of this recipe is made by braising chunks of pork neck in a sweet, savoury liquid over several hours, but this weeknight version is ready and on the table in under an hour. Taking advantage of store prepared vegetables can be a worthwhile shortcut to increasing variety and reducing prep time, however there is really ultimate flexibility with the vegetable mix to customize to your personal taste and preference. I reccomend the bulk of the veg to come from some kind of cabbage, as it provides a nice amount of volume.…

Mum’s Quick Chicken Curry Pasta
Chicken Curry Pasta was one of my favourite comfort meals as a child. Creamy, lightly spiced sauce over chicken pieces with peas, carrot, corn and pasta. Easy to eat by the spoonful and made for excellent leftovers. I brought it out recently in a burst of nostalgia for my weekly meal prep and realised just how convenient and macro friendly this recipe is. I’ll definitely be adding mum’s chicken curry pasta back into regular rotation because it’s light yet filling and packed with protein and vegetables. It’s always best and most delicious when someone else makes it for you, but this speedy low fat version is definitely worth making for…
