Oat Slice Cookies
Roughly 12 months ago we received a free sample of Oat Slice Cookies with our weekly grocery shop. They were tasty and convenient, though nothing particularly nutritious at roughly 150 calories from mostly carbs and fat. A box of 4 individually wrapped snacks retailed for a whopping $5.50. The more I thought about it, the more it annoyed me. Of course there is always a cost for convenience, but these were simple oat cookies. These crunchy chocolate whey cookies are based on a recipe that @_dereklau_ posted on instagram, sponsored by Optimum Nutrition. It’s the first time I’ve had a protein cookie that wasn’t disappointingly soft or overly artificial tasting. The natural peanut butter we buy doesn’t work well with the original recipe. I’ve added an extra egg to help bind the mixture together though Derek suggested adding additional coconut oil. As the recipe already comes out pretty oily, I prefer the texture of an added egg. White Chocolate, Cranberry & Macadamia Chunk Cookies
The cookie itself can be super crispy if you leave them in the oven for the full 25 minutes. For those wanting a slightly chewier bite, you are best erring on the side of slightly underdone as they firm up as they cool. This recipe is adapted from an old Mrs Fields recipe book and makes a fairly large batch of cookies. I got 41 cookies from this batch.
