    Sweet Soy Noodles with Crispy Onion & Asian Greens

    Today’s recipe is fairly short and sweet. We started making this noodle dish after Derek Lau posted his version of Kolo Mee on Instagram. It has since become a weeknight staple that is both delicious and quickly prepared. The original recipe featured a brand of plant based mince, so you could certainly sub that in if you prefer. Tofu crumbles or rehydrated TVP would also work as suitable replacements for the Beef mince depending on your preferences – as would chicken or pork.     Zesty Orange Beef Summer Salad

    The beef for this salad is quickly marinaded in an ever so slightly asian inspired sauce, with the salty briney sea flavours of oyster and fish sauce bringing out the strong umami beef flavour. Thinly sliced warm or cold beef then melds with a refreshingly tangy, sweet and ever so slightly sour dressing.     Veggie Loaded Shepherd’s Pie

    I’ve always loved a good hearty Shepherd’s pie and this veggie loaded version is no exception. By pairing the sweet potato with cauliflower in the mash, we get the main benefit of a topping that is both lighter in calories and carbs. This pie reheats well as leftovers and also freezes well for meal prep.
