Tiktok Style Feta Pasta

I’m well behind the trend in posting about this Feta Pasta dish that went viral in early 2019. It would be remiss of me to exclude it from our recipe archives though as this meal is now a weeknight staple in our rotation.

I’ve made a few tweaks to lean more heavily on year-round pantry staples, but this dish is also fantastic when made with fresh basil and cherry tomatos in season. As for pasta choice, this is also incredibly flexible. Some batches we will use meat-filled tortellini and others we will use dried protein pasta.

The key is to stir through the melted cheese while the tomato is still piping hot so that it combines into a smooth, creamy sauce.

 200 g Australian Style Feta Cheese
 800 g Canned Cherry Tomato
 2 tbsp Basil Paste
 2 Cloves Garlic
 375 g Protein Penne Pasta (i.e. Vetta Brand)

Line a large baking dish with Baking Paper if desired. Preheat the Oven to 180 degrees Celcius & Check the packet instructions for the cooking time for the particular brand of pasta you have.

Squeeze the basil paste into the center of the dish & top with whole block of Feta. Place two whole peeled garlic cloves in the dish

Surround the feta with the contents of the two cans of cherry tomato, covering the garlic. Season with Salt & Pepper.

Transfer the dish to the oven & bake for approximately 40 minutes or until golden.

While the feta mix is baking, set a large pot of water to boil & cook pasta according to packet directions. Please be aware that since protein pasta timing varies significantly according to brand this could take differing amounts of time. You want to aim for the pasta to be ready close to when the feta is baked.

Once the Feta is hot & golden, or when the tomato's are starting to brown or look roasted - remove the baking tray from the oven and place on a heatproof surface. Stir the melted cheese and basil paste through the hot tomato mixture, mashing the cooked garlic cloves until the sauce is well combined. If this mix is let to cool, the feta will return to it's solid state and not form the melty sauce that we desire.

Coat the pasta in the sauce and divide into four (or more) servings, depending on your family's needs.

What type of Feta do I need?

Feta can come in a variety of different styles and this recipe generally works well with any of them. You can even use a block of cream cheese if you prefer, depending on what you have available.

I generally default to the Australian Style made with cow’s milk, however have also had great success with greek style.

Greek style Feta cheese generally tends to be slightly saltier than Danish style, which is often creamier.
